Unique wine produced from Sangiovese grapes that are harvested from a vineyard in a cooler area, planted with a view to producing an experimental wine. Harvest occurs earlier than usual to maintain the freshness of the grapes. In the press, only the must that is not coloured by the skins is retained. This gives a white colour with peach reflections. The nose has flower and fruity notes with hints of wild berries. Nicely sapid, it reminds of Japanese sake wines.
