This sparkling Lambrusco is made from a blend of Lambrusco Grasparossa, Sorbara, and Salamino grapes. Grasparossa contributes depth and rich colour, Sorbara adds elegance and lightness, while Salamino, the most common variety, ensures optimal ripeness and sugar content. After harvest, the grapes undergo destemming and crushing, followed by fermentation with the addition of frozen must from the same varieties before bottling. The wine is then refermented in the bottle, delivering the distinctive freshness, directness, and authenticity characteristic of Emilia’s terroir.
